Ingredients
Apricots, pitted and quartered 2
Brown sugar 1 tbsp
Corn starch 1/2 tsp
Rolled oats 3 tbsp
Flour 1 tbsp
Salt 1 pinch
Coconut oil, melted 1 tbsp
Maple syrup 1 tbsp
To top:
• Motueka Creamery Vanilla Ice Cream • Dried apricot pieces • Walnut pieces
Method
- Preheat oven 180˚C and grease a ramekin or mini cast iron pan.
- In a small bowl, toss apricot pieces with brown sugar and corn starch. Pour into ramekin/ pan.
- In another bowl, mix together rolled oats, flour, coconut oil and maple syrup. Sprinkle crumble mixture on top of apricots
- Bake in oven for 25 minutes or until golden brown on top.
- Serve topped with vanilla Icecream, dried apricot and walnut pieces.
